Crab Stuffed Portabello Mushroom Caps 

ingredients:

4 good size portabello mushrooms

1/4 cup diced onion or spring onion

2 finely minced or grated garlic cloves

seasoning of your choice (I like Mrs Dash or Costco’s salt free organic seasoning)

1 egg

1/4 cup mayonnaise

1 thick slice of bread – torn into pea size pieces

1/4 cup grated Parmesan cheese

zest of 1/2 a lemon

1 – 270 gram package of fake crab – flaked or tin of fresh crab

Method:

Preheat oven or toaster oven to 350

lightly grease a cookie sheet

Remove the stems from the mushrooms, Sauté mushroom stems, onions and garlic in some olive oil add some Costco salt free seasoning – cook on medium stirring frequently until onion is softened but don’t burn the garlic

In a bowl, mix together the 1 pkg fake crab or real (I use fake as husband is allergic to the real thing), 1/4 cup Mayo, 1 egg, 1-2 slices torn up bread and 1/4 cup grated Parmesan and zest of 1/2 lemon – add the goodies you sautéed up and stir everything together – pile high in mushroom caps – bake at 350 for 40 minutes
